This lot features a honey-processed Illubabor Forest, a cultivar developed in 1974 for its disease resistance and natural compatibility with forest environments. Grown in the Gaylee Block of Gesha Village Coffee Estate in Bench Maji, Ethiopia, it thrives at elevations between 1,916 and 1,982 MASL.
The estate is meticulously organized into eight sub-farms, known as “blocks,” each tracked through in-house systems from cherry to export. Gaylee takes its name from the nearby neighborhood “Gaylee-Gesha,” where the estate’s water source, the Yetgordon River, originates.
In the honey process, cherries are pulped (skin removed) but retain their mucilage, allowing them to dry with a thin, sticky layer that enhances sweetness and complexity.
Expect a dense, syrupy body with pronounced sweetness and soft floral aromatics, highlighted by notes of hibiscus, black tea, and maple syrup, all carried by a smooth, layered finish.
