This washed Ethiopian heirloom lot comes from smallholder farmers in Uraga, Guji, an area known for its pristine altitude and vibrant cup profiles. Expect delicate white florals, zesty citrus, lime acidity, and a soft, mango-like sweetness.
Ripe cherries are selectively handpicked and delivered to the Tebe Burka Washing Station, where they're de-pulped on the same day of harvest. The coffee undergoes a traditional washed process: 36 to 48 hours of fermentation, followed by a thorough washing to remove mucilage. The beans are then dried in parchment on raised African beds for 12 to 15 days, allowing for even and consistent drying.
The result is a clean, lively cup that highlights the clarity and complexity of the Guji highlands.
